Oatmeal Butterscotch Chocoloate Chip Cookies

Looking for a yummy treat to make this weekend? My sister Natalie is one of the best bakers I know and she is always my go-to resource when I'm looking for a new dessert recipe or I have a particular craving. Last summer, Natalie and her husband David and their daughter Melody lived with us for a couple of months while David did a clinical rotation at a physical therapy clinic in my area. During that time, Natalie and I baked A LOT. I collected a number of good recipes during our time together, but this one is my favorite. It has simple ingredients and comes together very quickly. This recipe also freezes really well, so if you want to make a dozen cookies and freeze the rest of the dough, you'll have cookie dough on hand in an emergency (or am I the only one with cookie emergencies??)

Makes 3 dozen cookies plus enough dough for the fridge to keep my husband snack-happy for a couple of evenings:

1 c. butter (softened) 
1 c. brown sugar 
1 c. white sugar 
2 eggs 
1 tsp. vanilla extract 
1/2 tsp. salt 
1 tsp. baking soda 
1 tsp. baking powder 
2 c. flour 
2 1/2 c. old fashioned oatmeal 
6 oz. semi-sweet chocolate chips 
6 oz. butterscotch chips 

Preheat oven to 400 degrees. In a large bowl, cream butter and sugars. Add eggs and vanilla and mix well. Stir in dry ingredients, add chips. Bake for 6-8 minutes. Transfer to cooling rack, enjoy!

I have a great recipe for the same cookies. Ours is different than yours. But they are super yummy - I agree. :)
